An old winery of 1827, in a very quiet area in Messaria village of Sadorini, was converted into  traditional complex of four independent Cave Houses. “Canava Santino” is surrounded by 19th c. mansions  owned by the well known Sadorinian traders with Russia, next to St. Dimitrios church.  This Traditional House was initially one of the biggest places in the village of Messaria where wine was produced; it was a ‘canava’!

Canava in the old days was called the place where the wine was produced and maintained. Usually, canava was made by digging into the volcanic soil, the so called ‘aspa’, creating caves. In there the ideal conditions of temperature and humidity were met in order to preserve good quality of wine.

The Markezinis canava was developed on a plot of about 500 sqm, consisting of excavated big rooms (room so called ‘iposkafo’). In the one of them, today so called “Ammoudi”,  the wine was stored in two rows of big barrels with a passageway between them. In the second and third caves, “Merovigli” and “Oia”, the wine was produced. There, the grapes were pressed by the feet in the pressing floor, the ‘patitiri’. From patitiri the must was flowing by gravity in two ‘linos’, the must collectors, from where the must was taken to the barrels, becoming later on wine in the two of the caves (the”iposkafo”).

Four (4) independent luxury Cave Houses (from 55 to 120 sq.m.), fully equipped with antiques and traditional family furniture, are viewing and rest at a beautiful backyard of about 175 sq.m. Atmosphere and privacy are the main characteristics of the property, plus the feeling of resting in a former wine tank! At a distance of  5 minutes drive you are in Fira (the capital of Sadorin), where is the famous Caldera of the volcano,  3 minutes from the airport and 15 minutes from the harbor of Athinios. Beaches are at a distance of 5 Monolithos), 8 (Kamari) and 15 minutes (Perissa – Perivolos).

The last wine produced on 1971 in the Canava Markezini was the Santino wine, which gave us its name, thus becoming: Canava Santino
